Double Cheese Macaroni

This is a wonderful recipe for a delicious Double Cheese Macaroni that will serve 4 people in total. This is really warming on a cold day and it's very easy to make. Are you hungry? Great let's get started right away.

The Ingredients
8 oz dried Macaroni
9 oz Ricotta Cheese
1 1/2 tbsp Whole-grain Mustard
3 tbsp snipped fresh Chives, plus some extra for garnish later
7 oz halved Cherry Tomatoes
3 1/2 oz Sun Dried Tomatoes in oil, drained and chopped
Butter or Oil for greasing
3 1/2 oz Cheddar Cheese, grated
Salt and pepper

The Method
1. Bring a large saucepan of lightly salted water to the boil.
2. Add the Macaroni and cook for 10-12 minutes or until tender but firm to bite. Drain the Macaroni and put to one side.
3. Mix the Ricotta Cheese with the Mustard and Chives in a large bowl (or your now empty saucepan), season the mixture well with Salt and Pepper.
4. Stir the Macaroni into the Ricotta mixture and add both the Cherry and Sun Dried Tomatoes.
5. Grease a 3 pint shallow oven-proof dish. Spoon in the Macaroni mixture and spread it evenly.
6. Pre-heat the grill to high and sprinkle the Cheddar cheese evenly over the Macaroni mixture.
7. Cook under the pre-heated grill for around 4-5 minutes or until it's golden and bubbling.
Serve the Macaroni immediately, divide into four bowls and garnish it with some of the snipped fresh Chives that you saved from earlier.

This is really tasty, hot comfort food. The two different cheeses and the whole-grain mustard really make a difference. I hope you enjoy this recipe as much as we do.
